This weekend I had the duty of catering for an amazing and very creative 30th birthday party. It was such a blast! The menu was totally unique, “B for D” aka, Breakfast for Dinner.  Breakfast is my favorite meal of the day so it was the perfect fit. The party was a success and the birthday girl had a great time.

For appetizers I served prosciutto mini quiches, mini pancake skewers and fruit salad skewers. For the main course we had a build-your-own Belgian waffle station and a breakfast burrito bar. And of course for drinks we had Bloody Mary’s and Mimosa’s.

Here is the recipe for my favorite appetizer, Prosciutto Mini Quiches.


  • 16 slices prosciutto
  • 7 eggs
  • dash of milk
  • 1 small handful of chopped Chives
  • 1/4 freshly grated sharp cheddar cheese
  • salt and pepper


Preheat oven to 350 degrees. Slice prosciutto in half. Line 36 mini muffin tins with the half slices of prosciutto.  Allow the prosciutto to hang over a bit.  Meanwhile beat the eggs, chives, milk, cheese and salt and pepper. Pour egg mixture into the pre-lined muffin tin filling 3/4 of the way full.  Bake for about 15 to 20 minutes, or until the egg is cooked.
